Collagen Chocolate Chip Cookie Muffins

Speaking of things that will thank you, your tastebuds will be delighted with this healthy-ish muffin version of a favorite cookie classic. Most chocolate chip cookie recipes are delicious, but call for lots of crisco (eek) and sugar.
Why do you think they taste so great!?
It can also be difficult to find a gluten-free version that doesn’t taste, well, gluten-free! For this recipe we use oat flour and collagen in place of flour. We also nixed the white and brown sugar and substituted with coconut sugar (lower glycemic index, i.e. it won’t spike your blood sugar as much to digest) and maple syrup, and the flavors are amazing.
Make sure you make these to share, because you will want to eat the whole batch (which we don’t recommend, they still have butter after-all).
15 minute prep | 15 minute cook time | Makes 15-18 muffins
1 stick softened unsalted butter (1/2 cup)
1/2 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1 1/4 cup oat flour
1/3 - 1/2 cup chocolate chips
Preheat oven to 350 degrees.
Cream butter with coconut sugar.
Add maple syrup, vanilla, and egg and mix.
In a separate bowl, combine oat flour, baking soda, salt, and Unflavored Collagen Powder.
Gradually add dry ingredients to wet ingredients, fold in chocolate chips.
Add batter to muffin liners or silicone liners (as pictured) and bake for ~15 minutes or until golden brown on top.
Enjoy with fork straight from the liner!
