Simple Baked Chicken

Life can feel pretty chaotic and complicated at times. For some reason this past week felt like one of those weeks where despite my best efforts, the house always felt out of order, somehow my electronics were never fully charged when I needed them, and I was not able to get into bed before 11 pm (but side note, did you see the Oscars announce the WRONG winner for Best Picture!? Nuts).

Luckily prepping chicken is not hard or time consuming. This recipe is easy to execute, even on days I don't feel like cooking (or being a productive member of society in general). You can play around with spices to create different flavors (add cayenne if you want some spice, add cinnamon or turmeric if you want something different, etc), but I've found that I always have these spices on hand, and honestly it's pretty delish as is.

Time Allotment:

5 minute prep | 25 minute total cook time

Ingredient List

  • Chicken Breasts

  • Salt

  • Pepper

  • Paprika

  • Garlic Powder

  1. Set oven to 350 degrees, and start heating frying pan.

  2. Trim fat from chicken breasts.

  3. Pound chicken with a cleaver (or end of your knife if you don't have one).

  4. Place chicken on heated pan, and lightly dust with spices (to your liking).

  5. Cook ~3 minutes, flip, season, and cook other side for ~3 minutes.

  6. Place the pan in the oven, and bake for 20 minutes.

  7. Let cool for about 5-8 minutes before serving.

Any chicken you don't eat right away can be easily stored (I prefer glass containers), just allow it to cool ~15 minutes before popping into the fridge.
