Super Easy Veggie Hack

We all know that we need more vegetables in our diet if we want to lose weight, maintain a healthy body composition, have glowing skin, etc... the list goes on. So "eat veggies" is not exactly ground breaking info. 

The hard part is ACTUALLY eating veggies at every meal. Not only do you have to purchase them and try to eat them before they go bad (major feat in and of itself), you have to wash them, chop them, and then prepare them.

So. Many. Steps. 

So what if we told you there was an easy way to eat fresh veggies that required zero prep, they won't go bad in your fridge, and they are ready in just minutes? Too good to be true right? WRONG. Let us introduce you to the true veggie VIPs… 

Frozen Vegetables! 

If you needed some additional reasons to jump on board, they are also cheaper and more nutrient dense (because they are frozen just after being picked) than fresh veggies. So you honestly can't really go wrong.

Here are two of our favorite ways to incorporate them into meals. 

1. Breakfast: 

Eggs + frozen peppers and onions + sliced turkey + avocado

This literally takes 5 minutes to prepare, and it's loaded with protein, veggies, and good fats. For most people, it’s a good idea to go lower carb in the AM, because it won’t be hard to add those in later if needed (hello break basket for dinner). This breakfast will help you!

Prep: In frying pan, add a small amount of olive oil, add peppers and onions, then eggs and turkey. Cook for about 5 minutes, or until eggs are desired consistency. 

2. Lunch or Dinner

Carb + Protein + frozen veggie (broccoli is our fav) 

This is a pretty standard lunch around the KBCC HQ, and it only took about 5 minutes to toss together. 

Prep: Choose a carb base (brown rice, Baked Potato Cubes , brown rice pasta), and add a protein (like sliced chicken sausage from Whole Foods), and the toss frozen veggie on top and go! Another added benefit of using frozen veggies in a lunch is that you don't need to refrigerate your meal, the broccoli will keep it cold until you are ready! Heat for 2 minutes and enjoy!

So there you have it! The answer to your "how can I eat more veggies" woes! You can rotate through different combos so you don't get bored, and they won't go bad in your freezer (yay for less food waste too!).
